Recommended Infusion Guide

  • Quantity

    Use 2g of tea per 150ml of water.

  • Temperature

    For the optimum experience use water between 70°C and 85°C.

  • Time

    Infuse for 60 to 90 seconds, tasting regularly.

  • Infusions

    You can infuse this tea at least three times. With each careful infusion, different subtleties of flavour are revealed.

How to infuse your tea is very personal, and these are just our recommendations based on experience. Please experiment with these variables to your heart's delight. These are our recommendations, not hard and fast rules. The most delicious tea is the one you love.

Our guide uses a standard tea cup size (150ml/5.5 oz) as a measure, please adjust the quantity of leaf accordingly for less or more water. Our whole loose leaves are of such a high quality that you can infuse our teas at least twice, and the second infusion is often better than the first, with different flavours revealed as the leaf softens. If you prefer your tea stronger, add more leaf, don’t leave it for longer (this will just make it bitter).

Different temperatures will bring out very different flavours to this luscious blend.

We suggest trying the 21st Century Blend at 70°C, 75°C, 80°C & 85°C (158°F, 167°F, 176°F & 185°F) and find the temperature that best expressed the flavours you most enjoy. At lower temperatures it is sweeter and smoother but the higher temperatures bring out the headiest floral aromas and deep vegetal notes. Lower temperatures may require slightly longer steeping times.

Each infusion differs as you infuse the tea. For a really epicurean delight – please try making the first infusion at 70°C and leaving to steep for 90 seconds, then raise the temperature to 75°C for the second infusion, for 60 seconds, then the third infusion at 85°C for 45 seconds.

We are thoroughly committed to transparency but this is a rather secret blend. We don’t want to give the whole game away. Rare Tea has been so heavily plundered by other tea companies seeking to copy what we do (since our start in 2004), that we are keeping this invention close to our chests.

The teas come from our partner farms mentioned throughout this website. It is a blend created by our Rare Tea Lady Henrietta Lovell from fresh spring harvests from China, Japan and India.

By far the best Green Tea EVER!

We know green tea is good for us, but I have always found it doesn’t quite hit the spot for me. Then I tried 21st Century Breakfast: the sweetness and the nuttiness are outstanding, it is utterly delicious and I now drink it everyday, first thing in the morning. Worth every penny. I love what Rare Tea Company do.

Delicious Tea

This tea is lovely! I just make mine with water from the boiling water tap and it’s fantastic. So much more flavour than the dust you get in a shop bought green tea bag.

Great morning start

This tea is an excellent start to the day. At first I thought it was too strong a flavour, then I realised I was brewing it wrong! Make sure you follow the online instructions and you'll get a lovely brew.

Love this tea. I’ve been trying to drink more green tea and this one has a complex flavor that isn’t as hard-core green tasting as some others. It’s a wonderful way to start the day.
