How to infuse your tea is very personal, and these are just our recommendations based on experience. Please experiment with these variables to your heart's delight. These are our recommendations, not hard and fast rules. The most delicious tea is the one you love.
Our guide uses a standard tea cup size (150ml/5.5 oz) as a measure, please adjust the quantity of leaf accordingly for less or more water. Our whole loose leaves are of such a high quality that you can infuse our teas at least twice, and the second infusion is often better than the first, with different flavours revealed as the leaf softens. If you prefer your tea stronger, add more leaf, don’t leave it for longer (this will just make it bitter).
Beira Baixa Province
Grown on a small, family run, organic farm in the Beira Baixa Province of Portugal; between the The Tejo Nature Park and the Naturtejo Geopark - a UNESCO world heritage site.
The air is rich with the scent of pine, rosemary and wild lavender and the area is abundantly biodiverse.
The farmers Henrique and Rosário tell us that it can be used to relieve nervousness, headaches, coughs and a sore throat.
When we first tasted this infusion we were overcome with happiness. It is not well known and rarely cultivated for tea. We were very lucky to find it. The farm is wholly organic and has been since Henrique and Rosário began growing herbs in 2007. They left professional lives in the city with their young family

The local team who work with them also receive a share in annual profits. Cinnamon Basil was taken into space by the Endeavour Space Shuttle in 2007 and grown in an experiment in low earth orbit on the International Space Station. It actually is, out of this world.
