More infusion tips
How to infuse your tea is very personal, and these are just our recommendations based on experience. Please experiment with these variables to your heart's delight. These are our recommendations, not hard and fast rules. The most delicious tea is the one you love.
Our guide uses a standard tea cup size (150ml/5.5 oz) as a measure, please adjust the quantity of leaf accordingly for less or more water. Our whole loose leaves are of such a high quality that you can infuse our teas at least twice, and the second infusion is often better than the first, with different flavours revealed as the leaf softens. If you prefer your tea stronger, add more leaf, donβt leave it for longer (this will just make it bitter).

Crafted by Wei and his mother on their organic family farm in Taitung, Taiwan. They are supported by the local organic farming community who share skills and labour through the seasons.

The finished rolled Sunset Oolong goes through an impressive precision cutting to create a finer-cut tea with a greater surface area for better extraction in cold water. Itβs the finished loose leaf tea that is cut rather than the fresh leaf so that oxidisation doesnβt increase during processing.
When you hot extract a tea you start oxidisation of the leaf (like cutting an apple that starts to go brown) but by cold infusing the tea youβre not causing oxidisation or extracting the tannins. Instead, you are using osmosis to extract all the wonderful nutty, biscuity flavours and sweet carbohydrates.
Because this tea is created for cold extraction we donβt recommend using it to make a hot tea. But if youβve set your heart on trying it, do a very quick extraction of just a few seconds because the tannins and other bitter properties will be very readily available.

If youβre serving cold infused tea with food, this is the most adaptable tea pairing - it goes with pretty much everything; sweet, savoury, umami (apart from sour).
If we were describing this tea as a dancing partner he would be more of a Fred Astaire than an Elvis Presley. By this we mean he likes to dance with a partner rather than shimmy on his own.
It really is the best iced tea for a tea and food pairing.
