Grown and hand-harvested for us by our dear friend Ferran Rojo Sol, the same chap we must thank for our Rare Spanish Almond Blossom.

Elegant and smooth with a unique sweetness and a bright aroma. A vivacious anise flavour with notes of citrus. The mouth feel is soft and round and there isn’t the least trace of bitterness.

More infusion tips
How to infuse your tea is very personal, and these are just our recommendations based on experience. Please experiment with these variables to your heart's delight. These are our recommendations, not hard and fast rules. The most delicious tea is the one you love.
Our guide uses a standard tea cup size (150ml/5.5 oz) as a measure, please adjust the quantity of leaf accordingly for less or more water. Our whole loose leaves are of such a high quality that you can infuse our teas at least twice, and the second infusion is often better than the first, with different flavours revealed as the leaf softens. If you prefer your tea stronger, add more leaf, don’t leave it for longer (this will just make it bitter).

History
Fennel (Foeniculum vulgare) is documented richly throughout history – Pliny (AD 23-79) thought it so powerful that he used it to treat a huge variety of different ailments.
A physician from the thirteenth century noted "he who sees fennel and gathers it not, is not a man but a devil".
Fennel is used extensively as a medicinal plant. Taken as tea, this ancient remedy has been used as an appetite suppressant, to aid digestion, treat heartburn, bloating and to help you sleep or as a simple tool to freshen your breath.

HARVEST
In late spring the plant produces an abundance of yellow flowers that Ferran harvests by hand in July. He delicately cuts the stalks then ties the blossoms into groups, where they are hung and left to dry in his farmhouse.

Pollinators
Fennel flowers produce huge amounts of nectar (adding to its sweet taste) – and are a favourite food source for bees and other pollinators that are attracted to its umbels as they are so easy to land on and collect nectar.

Ferran Rojo Sol
Ferran is a humble man. He happily spends his days quietly growing organic fruits, vegetables, and flowers, supplying his bounty to the local community through his small farm shop. People began coming from far and wide for his outstanding produce.
Word spread further afield, and it wasn’t long before the chefs at Mugaritz went to visit - and they introduced us.
At Rare Tea we are constantly searching for new terroirs, new flavours and new adventures. What Ferran was doing ticked all these boxes, and Henrietta went to visit to ask if we could collaborate – lucky for us, Ferran said yes.
Like many of the farmers we are fortunate to partner with, Ferran quickly became a friend. Back in 2018 he was in London and joined us for our Rare Tea Christmas Party!

In the isolated case that you are not completely satisfied with any tea or teaware you purchase from our website, please get in contact with our customer services team to discuss returning your order.*
In most instances we will give you a full refund of the item’s cost excluding postage. We may ask you to return the item to us. Customers in the European Union have a statutory cooling-off period of fourteen days that is not affected by this guarantee, but any tea pouches much remained sealed for this to be in effect.
*We only accept returns/refunds for tea within two months of receipt, because it is impossible for us to know if the tea has been stored correctly.
