Getting Started: How to Explore Your Tea Samples:
Hot Tea
We have weighed each sample so itβs exactly right for a single cup of tea (150ml).
For best results, please follow the recommended water temperature and infusion times detailed in the instructions enclosed with your samples; or check the relevant page on this site.
The best teas can often be infused more than once - revealing extraordinary layers of flavour.

Iced Tea
This is a very simple but highly effective method that will allow you to make flavour stable iced tea that will last perfectly for 3 days.
These samples have been measured to make 500ml infusions.
You Will Need
- bottle or container
- A fine strainer or super-bag
- A cold room or refrigerator
Important Notes
- Teas are highly recommended as a cold infusion. Cold water does not rupture the delicate cell structure β preventing your iced tea from oxidisation and rapidly deteriorating flavour. Instead it stays wonderfully stable.
- It also makes a more elegant, delicious and less bitter drink.
- Using this method very small changes in the amount of tea will make big effects. Just one extra gram per litre will add significantly more depth of flavour. These samples have been made to be very quaffable β for pairing with food we would recommend a little more tea for more intensity.
- Most herbs are better made hot and then chilled. They need higher temperatures to extract their essential oils.
1. Add the sample of tea to your bottle/container or super-bag. Cover with 500ml of water
2. Infusion
Cold infusion for tea:
- Store in a sealed container in the fridge.
- After recommended infusion time, remove the super bag with the tea/ or strain the tea
Hot infusion for herbs:
- Allow to infuse for the recommended time, strain and refrigerate.
3. Your iced tea/herbs will remain stable for 3 days refrigerated

Matcha
Please sift your sample through a tea strainer and add a small amount of cold water (10ml) to make a smooth paste before adding the main volume of milk or water to make the full drink. This will allow you to get a smooth and creamy consistency.
Service Models and Teaware
We recommend using a single-serve per guest for consistency, balanced flavour and strong gross profit margins and it wonβt oversteep! There is no generosity in a large pot of beautiful leaves left to over infuse - like a medium rare steak left in a pan to become shoe leather
