Incredible! I have never had Chamomile tea like this before.

I have never had Chamomile tea like this before. These flowers are mellow and sweet. The color of the tea is bright yellow. Amazing quality. After I tasted this herbal tea I ordered two more as gifts.

Tasting Notes

Clean and subtle, these flowers are also wonderfully calming and, of course, caffeine free.

How to make chamomile tea

The general rule of thumb is that all herbs should be infused at 100°C, to dissolve the essential oils. After long experimentation looking for the best flavour extraction, we found that chamomile (like tea), contains bitter compounds. The best flavours are released at lower temperatures – treat it like a green tea and infuse at 70°C. This brings out the sweetness and leaves all the bitterness behind.

Chamomile is the only exception to the herbal rule.

Quantity

Use 2g of flowers per 150ml of water.

Temperature

For the optimum infusion use 70°C (158°F) water.

Time

Infuse for 1 - 2 minutes, tasting regularly.

Infusions

You can infuse these herbs at least three times.  With each careful infusion, different subtleties of flavour are revealed.
