The flavours are clean and bright with notes of fresh spinach and pea pods, complemented by a smooth, silky mouth feel.
Our phenomenal Green Whole Leaf comes from the Anshun area of Guizhou in the South West of China. The area is remote and largely unspoilt with abundant forests and cloud cover draping the mountains - making it the ideal terroir for tea.

Off the beaten track...
Like many of the places we source our leaves from around the world – it is a little off the beaten track. In our endless hunt for clean environments and organic, sustainable farming practices without any damaging pesticides or herbicides - we have ventured into these relatively unknown hills.
Here we have found teas of stunning quality. They might not be as famous as their counterparts in Fujian or Zhejiang, but like Sikkim outshines Darjeeling we believe we have found something extraordinary.
WHITE MONKEY PAW
Made from the soft new leaves of spring it is also known as White Monkey Paw (Baimao Hou) after the resemblance of the delicate, curled, white, downy buds it contains to the curled paw of a little monkey.
The leaves are pan fired as quickly as possible after plucking. Within hours they are brought to large very hot metal bowls. The fresh leaf is gently rolled inside the hot pans so that every part of the leaf is exposed to the heat - sealing in the fresh green flavours.

The clean, subtle flavours are an ideal tea to accompany food. It goes particularly well with savoury food and we love it for breakfast with smoked salmon and poached or scrambled eggs.
