When we first tasted these unique almond blossoms we were astounded. The taste is so sweet and honey-like it really is a little like drinking a soft, floral honey. The flavour is deep and heady. Almonds and honey with a delicious note of globe artichoke.
Terroir is crucial to all plants: the pH of the soil, rainfall, sunshine, flora and fauna and the biodiversity among all the factors that make an area unique - also affect the flavour of the plants that grow there.
Just as grapes can differ from field to field, region to region and country to country - so too do tea bushes and almond trees.
These precious flowers are from Tarragona, in Catalonia. Due to their delicateness the flowers must be harvested by hand and individually dried. Each flower is picked individually then carefully air dried on a muslin bed to prevent the blossoms from bruising - a labour of love.
