How to infuse your tea is very personal, and these are just our recommendations based on experience. Please experiment with these variables to your heart's delight. These are our recommendations, not hard and fast rules. The most delicious tea is the one you love.
Our guide uses a standard tea cup size (150ml/5.5 oz) as a measure, please adjust the quantity of leaf accordingly for less or more water. Our whole loose leaves are of such a high quality that you can infuse our teas at least twice, and the second infusion is often better than the first, with different flavours revealed as the leaf softens. If you prefer your tea stronger, add more leaf, donβt leave it for longer (this will just make it bitter).

GREEN TIPS
The taste of spring
Picked in the early Spring before the first rains, Long Jing is the taste of spring, the first green tips of the year.
Sourced from the banks of the West Lake of Hangzhou in Zhejiang Province. The small farm is owned and run by the Lin family and they can only craft very limited harvests of Longjing. They farm organically without using any pesticides or herbicides, and the land is rich in wild flowers, butterflies and birds.

Myths & Legends
There are many myths about Longjing and why it has its name it translates into English as βDragon Wellβ. Our favourite is that there was a deep well on the South shores of the West lake with dense sweet water. When the spring rain fell into the well the lighter, aerated water mixed with the well water and swirled in patterns resembling a dragon.

Imperial Tea
Venerated by an Emperor
In the Qing dynasty Longjing was awarded the title of "Imperial" tea (Gong Cha). There are many stories about how the tea came to be so beloved; the best is about an Emperor hiding the leaves up his sleeves....
He was watching the pickers moving beautifully through the bushes and had been so entranced that he followed their movements and picked his own tea. At this moment a messenger brought him news that his mother was gravely ill and he slipped the fresh leaves up his silken sleeve. On returning to his mother he found the leaves pressed flat like a feather. He infused them for his ailing parent, and of course, she immediately returned to full health so the tea was suitably venerated.

I think this is probably my favourite green tea. Itβs probably on a level pegging for me as the wonderful White Silver Tip. But I reach for this one, when I need just a little extra waking up! Say 11 oβclock in the morning.The flavour is so delicate, softly grassy but also tropical. The second brewing is often better than the first! A real treat of a tea. I love itβ¦.

Life changing green tea
At the turn of the year I decided to cut down on coffee and start to enjoy more green tea. I always didnβt mind green tea but after discovering this green tea I have been ruined for all others. I suggest taking the time to watch the video of how to brew it perfectly a as temperature makes more difference than I thought possible. I love this tea and wholeheartedly recommend it.
