More infusion tips
How to infuse your tea is very personal, and these are just our recommendations based on experience. Please experiment with these variables to your heart's delight. These are our recommendations, not hard and fast rules. The most delicious tea is the one you love.
Our guide uses a standard tea cup size (150ml/5.5 oz) as a measure, please adjust the quantity of leaf accordingly for less or more water. Our whole loose leaves are of such a high quality that you can infuse our teas at least twice, and the second infusion is often better than the first, with different flavours revealed as the leaf softens. If you prefer your tea stronger, add more leaf, donβt leave it for longer (this will just make it bitter).

If you have tried white tea in a teabag you may be forgiven for thinking our description is pure hyperbole.
But this is nothing like an industrial white tea, and it really goes beyond what you might expect from even the best loose leaf white tea we have ever tried.
You can taste the pure terroir of the Jun Chiyabari Tea Garden. This non-intervention farm is so rich in clean air, fertile soil, biodiversity and love.

Delicately plucked at the very start of the spring first flush, just as the bushes come out of their quiet winter period when they stop growing and bide their time until the warmth returns to the mountains.
Jun Chiyabari is the highest tea garden that we work with, and the spring growth is slow to emerge but when it does, it brings with it exceptional flavour. There is an incredible intensity to this loose leaf white tea, that will simply knock your socks off.
Not only does this sublime white tea make a delicious hot tea, but it also works beautifully to make a cold infused iced tea. Cold infusion tea (also known as cold brew tea) allows only the sweetest flavours to dissolve. It does take patience but 6 to 7 grams (0.21 to 0.25oz) left to steep in cold water in the fridge overnight will make the most refreshing loose leaf breakfast tea, calorie-free and rich in antioxidants.
